If you’re cooking up some yuca (cassava root) in the United States, there’s a good chance it came from Costa Rica.
A new report by the National Production Council says 89 percent of the yuca in the U.S. is exported out of Costa Rica. The study states that during the first half of the year, the U.S. took in 36 tons of yuca, and 32 tons arrived via farms in Costa Rica.
The majority of the yuca is sold fresh, although U.S. residents also can buy the root frozen. The product is mainly popular with the Latin population in the U.S., the report says.
